Zucchini Carrot Scallion Pancake Recipe by Kristin Omdahl
Scallion pancake is one of my favorite carryout dishes. This recipe is a healthier version – chock full of veggies, without oil, white flour or egg. This is easy and cheap to make and can be served as a savory breakfast, savory snack, a side dish or a main entree paired with sushi rice, and homemade spicy sauce.. Leftovers are awesome the next day, too.
You could easily change up this recipe for variety by changing the spices and fresh herbs.Cilantro and fresh lime zest would be yummy. And so would fresh basil and sun dried tomatoes.
What you will need:
- 1 zucchini, shredded
- 1 carrot, peeled and shredded
- 4 green onions, chopped, separating the white and green parts
- 1 clove garlic, crushed
- 1 TBSP fresh mint, chopped
- 1/2 cup chickpea flour, find it HERE
- 1/4 cup water
- 1 tsp sumac, find it HERE
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt and pepper to taste
- non-stick cooking spray (I used avocado spray)
Garnishes:
1/2 cup cooked and cooled sushi rice
1 tsp furikake rice seasoning, find it HERE
1 tsp spicy mayo (recipe below)
What to do:
- Preheat oven to 350 degrees.
- Shred the zucchini and carrot.
- Chop and separate the white and green parts of the green onions.
- Mince the garlic.
- Combine zucchini, carrot, whites of the green onion, mint and garlic in a large mixing bowl.
- Add the spices. Mix to combine.
- Add the chickpea flower and water. Combine with the veggies until a batter forms.
- Using a 1/2 cup measure, scoop batter into a lightly greased (with non stitch cooking spray) and pre-heated pan over medium high heat.
- Cook on one side until golden brown (5 – 7 minutes).
- Flip pancakes and cook until golden brown on second side.
- Move pancakes to a cookie sheet and bake in the preheated oven for 15 minutes, until cooked through the center.
- Garnish with the remaining chopped green onions.
- I served mine with cooked sushi rice, furikaka seasoning and spicy mayo (recipe below).
Spicy Mayo Recipe:
What you will need:
- 1 TBSP mayonnaise
- 1 tsp sriracha hot sauce
- 1/2 tsp sesame oil
- 1/2 tsp ponzu sauce
What to do:
- Combine all ingredients together. Thin with a few drops of water if it does not drizzle well.
