Easy Pico De Gallo Salsa Shown Three (3) Ways for Healthy Quick Dishes by Kristin Omdahl
Pico de Gallo is one of my favorite go-to dishes for a quick appetizer. With the chopper I found on Amazon HERE, it is not only cheap, healthy and delicious but it is also lighting fast to make, too!
Pico De Gallo Recipe:
What you will need:
- 1 pint tomatoes, 1/4 in diced (I used grape tomatoes)
- 1/2 red onion, 1/4 in diced
- 1/2 jalapeno pepper, 1/4 in diced (seeds removed)
- 1 bunch cilantro, finely chopped
- 3 limes, juiced
- 1 clove garlic, minced
- salt to taste
What to do:
- Mix all ingredients together in bowl.
- Serve with chips, crudite, or use in the suggested recipes below.
Pico De Gallo Bruschetta Recipe:
What you will need:
- 1/2 cup pico de gallo
- 1/2 loaf baguette bread
- 1 TBSP olive oil
- 1/4 cup shredded cheese (Monterey Jack, taco blend or 6 cheese Italian work well)
What to do:
- Preheat oven to 425 degrees.
- Slice bread thinly.
- Brush oil on both sides of bread.
- Bake bread for 5 minutes until slightly golden.
- Layer pico de Gallo on bread slices. Sprinkle with cheese.
- Bake for 5 minutes until cheese is melted.
Pico de Gallo Chicken Recipe:
What you will need:
3 chicken breasts, boneless and skinless
1/2 cup pico de gallo
1/2 cup shredded cheese (Monterey Jack, taco blend or 6 cheese Italian work well)
What to do:
- Preheat oven to 425 degrees.
- Butterfly slice the chicken breasts.
- Place chicken in baking dish.
- Layer pico de Gallo on chicken breasts. Sprinkle with cheese.
- Bake for 35 – 40 minutes or until chicken is cooked through and cheese is melted and golden brown.
