How to Make Quick & Easy Vegan Parmesan Cheese Free Recipe
by Kristin Omdahl
I am so intrigued by the fact that one person can positively impact the environment by choosing plant based food sources. In an effort to transition my family slowly, when something feels like a good idea to try and substitute, I do. This quick and easy recipe is an oddly delicious alternative to grated parmesan cheese. I honestly did not expect it to taste this good. Sprinkle it on caesar salad, bruschetta or a comforting plate of homemade spaghetti.
It takes less than 5 minutes to make, too!
What you will need:
1 cup raw cashews
4 TBSP nutritional yeast flakes
1 small clove garlic
1 tsp Himalayan Pink Salt
What to do:
1. Place all ingredients in food processor.
2. Pulse in bursts until it is a fine meal, like the texture of grated parmesan cheese.
Store in an airtight container in the refrigerator for up to 2 weeks.
Delicious on breadsticks, pasta, soup, salad, appetizers, potatoes and can be added to dips, too.

I am sorry to have to write this but feel it is necessary and that concerns bovine welfare. A famous charity reports that cows do not always live in the verdant pastures where they should be but in sheds in inappropriate conditions. I do not purchase Parmesan cheese or similar products because of this but will do so again when the situation in that country is rectified. Cows are gentle creatures and deserve better treatment.
