Marlon’s Shrimp Scampi FREE Recipe

This is Marlon’s #1 favorite recipe I make for us. He loves it so much I have actually taught him to make it, too! It is so easy to prepare and takes just about as long to make as it takes for the pasta to boil! I am so proud that he is fearless when it comes to learning how to make new things in the kitchen!
1 lb shelled and deveined shrimp
1 lb pasta
2 TBSP olive oil
1 cup dry white wine
1 cup low sodium chicken broth
1/2 cup lemon juice
4 cloves crushed garlic
1/4 cup chopped green onions
1/4 cup chopped parsley
1/2 cup greek yogurt
1/2 cup grated parmesan cheese
Bring water to boil and cook pasta according to directions on box. In the meantime, in large saute pan bring oil to medium heat and cook the onions and garlic for 2 – 3 minutes. Add the wine, lemon juice and chicken stock. Bring to boil and reduce to simmer. Add the shrimp until they turn pink and opaque (5 – 7 minutes) and turn the heat off.
When the pasta is done, drain in the colander. In the hot pot, add yogurt and parmesan cheese with one additional table spoon each of olive oil and lemon juice. Mix together, toss the hot pasta back in the pot and toss to coat. Add the cooked shrimp, sauce and chopped parsley into the pot and toss everything together. Serve while hot. Sprinkle with additional parmesan cheese if desired. Enjoy!
