Decadent Pecan Pie Bars with Cinnamon Shortbread Crust FREE Recipe

This easy and decadent dessert has the flavor profile of pecan pie with a slight homage to baklava – my two favorites! The super simple shortbread crust is scented with a little cinnamon and the pie filling is doubled to create an abundance of gooey-ness. I’ve yet to find someone who doesn’t roll their eyes back when tasting this for the first time.
Ingredients:
Shortbread:
1/2 cup (1 stick) butter
1 cup all-purpose flour
1/4 cup light brown sugar
1 tsp cinnamon
Filling:
1/2 cup brown sugar
1/4 cup butter (1/2 stick)
1 cup corn syrup
1 tsp vanilla
3 eggs
2 cups coarsely chopped pecans
pinch of himalayan pink salt
Directions:
1. Preheat oven to 350 degrees
2. Make shortbread. Mix together butter, flour, sugar and cinnamon. Press into the bottom of a 9″ x 9″ baking pan. Set aside.
3. Make Filling. Beat eggs, then mix sugar, corn syrup, vanilla, butter and salt together with the eggs. Add the pecans. Pour over the crust.
4. Bake until golden brown, about 30 – 35 minutes. Allow to cool completely (about an hour) and refrigerate to set up further. Cut into slices and serve.
