Florida Sunshine Chicken FREE Recipe by Kristin Omdahl
Florida orange juice always reminds me of sunshine. Maybe its the color, maybe its the bright and fresh flavor. I have a recipe that I LOVE to make if or when we have extra orange juice in the fridge and it’s about to expire. I use it as a marinade and sauce ingredient for a super simple and DELICIOUS chicken recipe. The acid in the juice tenderizes the meat in the marinade. And the sweetness of the oranges balances so well with the stronger flavors of the onion and garlic. It may seem like a lot of marinade, but trust me, everyone will be asking for extra sauce for over their rice and chicken.
Once you add the chicken to the marinade, DO NOT taste it anymore until after the chicken is completely cooked!
Florida Sunshine Chicken FREE Recipe

6 boneless, skinless chicken breasts
3 cups orange juice
1 red onion, chopped
2 cloves garlic, chopped
2 green onions, chopped (plus more for garnish)
2 TBSP chopped cilantro (plus more for garnish)
1 TBSP chicken boullion paste (I LOVE better than boullion from Costco)
1 TBSP Old Bay seasoning
salt & pepper to taste
sliced limes for serving
Steamed jasmine rice (optional for serving)
Mix all ingredients except for limes in a large bowl with the chicken. Let marinade for 1 – 2 hours.
Preheat oven to 350 degrees.
Pour chicken and marinade into oven safe bakeware dishes.
Bake at 350 for 35 minutes.
Broil for 10 minutes more, on the lower shelf of the oven.
Let sit at least 10 minutes before serving.
Serve with steamed jasmine sprinkled with chopped cilantro and green onions. Garnish with fresh lime slices.
P.S. Don’t expect many leftovers! This is a crowd pleaser!
